Deliciously moist Banana Cake.
Banana cake is perhaps the most underrated cake of them all. Forget chocolate, strawberry and vanilla, this banana cake offers everything that you could possibly want in a cake. It's moist, sweet without being sickly and, what's more, very very easy to make.
500 grams of Self-Raising Flour
300 grams of soft butter/Stork
400 grams of brown sugar
3 medium eggs
5 bananas mashed
a teaspoon of sunflower oil
a splash of lemon juice
a heavy pinch of salt
a teaspoon of vanilla essence
First mix the flour and butter together roughly. Next beat the sugar and eggs in a separate bowl. Combine the two mixtures before adding all the other ingredients and you're done.
Bake in greased cake tin or use baking paper at 180 - 220 degrees depending on your oven for 25 mins or until browned.
Serving and Storage
This cake keeps for what feels like an age. Store in a cake tin, the fridge or wherever you fancy. Well, that's if you can resist eating it immediately.
